For the filling: – 2 ripe pears, thinly sliced – 4 oz Gorgonzola cheese, crumbled – ½ cup heavy cream – 2 large eggs – ½ tsp black pepper
– ¼ tsp nutmeg – 1 tbsp honey (optional, for extra sweetness) – ½ cup chopped walnuts (optional, for added crunch)
Instructions 1. Prepare the crust: In a food processor or by hand, mix the flour, salt, and butter until it forms a crumbly texture. Gradually add cold water until the dough comes together. Wrap in plastic and chill for 30 minutes.
Preheat the oven: Set to 375°F (190°C). Roll out the dough and press it into a greased 9-inch pie pan. Prick the bottom with a fork and pre-bake for 10 minutes.
Prepare the filling: In a bowl, whisk together eggs, heavy cream, black pepper, and nutmeg.
Assemble the pie: Layer pear slices over the pre-baked crust, sprinkle Gorgonzola and walnuts (if using), then pour the egg mixture over the top.
Bake: Place in the oven and bake for 25-30 minutes, or until the filling is set and golden.
Cool & Serve: Let it rest for 10 minutes before slicing. Drizzle with honey if desired.
